These easy Blueberry Coconut Scones are loaded with fresh berries and topped with a sweet coconut glaze. Easy breakfast pastries are a great way to jump start your morning routine.

• 2 1/2 cups flour
• 1/3 cup granulated sugar
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon salt
• 8 Tablespoons cold butter
• 1 1/2 cups fresh blueberries
• 1/2 cup shredded sweetened coconut
• 3/4 cup heavy cream + 1 Tablespoon
• 1 egg
• 1 teaspoon coconut extract
• 2-3 teaspoons coarse raw sugar
• For the Glaze
• 1 1/2 cups powdered sugar
• 1 teaspoon coconut extract
• 2 Tablespoons water

INGREDIENTS:
• 2 1/2 cups flour
• 1/3 cup granulated sugar
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon salt
• 8 Tablespoons cold butter
• 1 1/2 cups fresh blueberries
• 1/2 cup shredded sweetened coconut
• 3/4 cup heavy cream + 1 Tablespoon
• 1 egg
• 1 teaspoon coconut extract
• 2-3 teaspoons coarse raw sugar
• For the Glaze
• 1 1/2 cups powdered sugar
• 1 teaspoon coconut extract
• 2 Tablespoons water
INSTRUCTIONS:
• Preheat oven to 400 degrees. Line your baking sheet with parchment paper or a Silpat.
• Whisk together the flour, sugar, baking powder, and salt.
• Add the cold butter. Using a fork or pastry blender, mix in the butter until there are no large pieces of butter left. Refrigerate the flour mixture while the oven heats and you prep the other ingredients.
• Stir in the blueberries and coconut. Create a well in the center and pour in the 3/4 cup heavy cream, egg, and coconut extract. Use a fork to pull the mixture together gently until a soft dough forms. Divide the batter into two even balls. Pat the dough balls into two 6 inch circles.
